Pudding is a popular UK dish that is boiled in a water bath or baked in a special dish. Puddings are cooked with meat, vegetables and organ meats, but sweet options based on milk, eggs and flour or prepared bread are especially tasty. Fruits, candied fruits, nuts are added to such products and served with sweet cream, sauce or jam.

It is necessary

  • English pudding
  • - 220 g bread crumbs;
  • - 600 ml of milk;
  • - zest of 1 lemon;
  • - 2 tablespoons of vanilla sugar;
  • - 60 g butter;
  • - 4 eggs;
  • - 60 g of icing sugar;
  • - 3 tablespoons of raspberry jam.
  • Steam apricot pudding
  • - 125 g white bread crumbs;
  • - 125 g butter;
  • - 60 g brown sugar;
  • - 30 g pancake flour;
  • - 6 tablespoons of apricot jam;
  • - 2 eggs;
  • - 1 teaspoon of baking soda;
  • - 6 very ripe apricots.

Instructions

Step 1

English pudding

In a large bowl, combine bread crumbs, vanilla sugar, and finely grated lemon zest. Bring milk and butter to nearly a boil and remove from heat. Pour hot milk over the bread mixture and let it rest for 10 minutes.

Step 2

Separate the yolks from the whites, beat them and pour into the bread mass. Grease a 1.5 liter pudding dish and pour the mixture into it. Place the pan in an oven preheated to 180 ° C and bake for about half an hour. Remove the pudding from the oven, cool slightly, and gently brush the surface of the product with raspberry jam.

Step 3

Whisk the egg whites into a strong foam, gradually adding the icing sugar. Save one teaspoon of powder for dusting. Place the beaten egg whites on top of the jam, sprinkle with powdered sugar and put the pudding back in the oven for 15 minutes. Serve hot, serve whipped cream separately.

Step 4

Steam apricot pudding

Melt the butter and jam in a saucepan. Mix the bread crumbs with flour, sugar and baking soda. Beat the eggs and pour into the mixture. Cut the apricots into slices and place them in the bread mass together with melted jam and butter. Mix everything and place in a greased pudding dish. Cover the tin with foil and tie tightly in a large linen napkin.

Step 5

Fill a saucepan halfway with water and place the pudding dish in it. Cook the dish for two and a half hours, adding water to the pan as needed. Cool the finished pudding in a mold and turn it over onto a serving platter. Serve the custard dessert.
