This delicious cottage cheese casserole resembles marshmallow in its texture - the same airy and soft. The added condensed milk changes the taste dramatically. The cottage cheese is not so strongly felt in it and the total mass becomes more tender. An additional flavoring note is added by caramel. Mexican curd flan is easy to prepare; difficulty may arise for inexperienced cooks at the stage of making caramel.

It is necessary

  • For caramel:
  • - milk or water - 5 tablespoons;
  • - sugar - 1/3 cup;
  • - butter - 20 g.
  • For the basics:
  • - liqueur "Cointreau" or "Amaretto";
  • - essence "Tiramissu";
  • - lemon zest and vanillin;
  • - lemon juice - 1 tablespoon;
  • - starch - 1 tsp;
  • - condensed milk - 200 g;
  • - cottage cheese - 400 g;
  • - egg - 3 pcs.

Instructions

Step 1

Beat the eggs with a mixer, making a fluffy foam. Add lemon juice to secure the mass. Add condensed milk, starch and cottage cheese. Add Tiramissa Essence. Use a mixer to turn all the listed ingredients into a homogeneous mass.

Step 2

Melt the butter in a small saucepan. Take a shape that is three times the volume of the resulting mass. Lubricate the bottom and sides with melted butter. Pour the sugar into the remaining butter in the saucepan.

Step 3

Bring sugar until caramelized over medium to high heat. Then lower the temperature slightly and raise the saucepan over the fire. If you do not do this, there will be splashes when injecting the liquid. Pour milk or boiling water into a saucepan. Put it on the fire again and, stirring constantly, bring until the sugar is completely dissolved.

Step 4

If the liquid evaporates too quickly, add more milk or boiling water. The finished caramel will be runny and stretchy.

Step 5

Pour 2 tablespoons of sugar into the mold, swirl until the sugar adheres evenly to the butter. If the mold is too small, make strips out of baking paper and build up the edges of the mold. You can secure them with a stapler.

Step 6

Pour the caramel into the bottom of the mold. Place cottage cheese on top of the caramel. Preheat oven to 200oC and place the dish there. Bake for about an hour. The time may vary depending on the size of the form. More time will be needed for a narrow and tall form.

Step 7

Remove the finished flan from the oven, use a knife to separate the casserole from the walls, cover the dish with a dish and turn the structure upside down. Remove the mold, being careful not to damage the dish. Mexican curd flan can be served with tea, coffee, milk or kefir.
