The fashion for healthy eating has presented a variety of options for dishes made from carrots. It is squeezed out for juices, mashed potatoes. Various salads, dumplings, caviar, omelets are prepared. One of the directions is baking with carrots.

- premium wheat flour - 1 tbsp.,
- baking powder - ½ tsp,
- baking soda - ½ tsp,
- salt - ½ tsp,
- ground cinnamon - 1 tsp,
- ground nutmeg - ¼ tsp,
- granulated sugar - 1 tbsp.,
- chicken egg - 2 pcs.,
- vegetable oil - ½ tbsp.,
- carrots - 400 g,
- coconut flakes - ½ tbsp.,
- cream cheese - 200 g,
- icing sugar - 3 tbsp.,
- butter - 5 tablespoons,
- vanilla and lemon extract - 1 tsp each

Step 1
Mix the flour, cinnamon, baking soda, baking powder, and salt separately.

In a separate bowl, beat the sugar, butter and egg. Whisk at a low mixer speed or by hand.
Step 3
Gently combine the dry mixture with the beaten egg mass. Add grated carrots and coconut flakes and stir.
Step 4
Heat the oven to 180 degrees. Put foil in a pie tin, brush it with butter. Divide the dough into the mold, bake for 30 minutes.
Step 5
To make the cream, combine the powdered sugar with softened cream cheese. Add butter, vanilla and lemon extracts. Whisk everything until smooth.
Step 6
Cool the finished pie, cut into two halves. Spread cream on the bottom. Press down on a layer of cream with the top of the cake. Chill the carrot cake for 3 hours before slicing.
