This nutritious omelet will be the perfect hearty breakfast before a long day of work.
It is necessary
- - 400 g of potatoes;
- - 1 onion;
- - 50 ml of milk;
- - 1 small pod of red pepper;
- - 250 g cherry tomatoes;
- - a few sprigs of parsley and cilantro;
- - 2 tbsp. tablespoons of vegetable oil;
- - curry powder to taste;
- - 8 chicken eggs;
- - salt.
Instructions
Step 1
Wash the potatoes thoroughly and boil in the peel until tender. Peel and cut onions into rings.
Step 2
Finely chop the pepper, after removing the seeds from it.
Step 3
Remove the skins from the boiled potatoes and cut into small cubes. Beat eggs with a fork or whisk with milk and salt.
Step 4
Heat oil in a skillet and sauté the onion and pepper until soft. Add tomatoes (halved), potatoes, curry and chopped greens and cook for 1 minute.
Step 5
Pour the beaten eggs over the vegetables and cook for 10 minutes over medium heat, covered. Garnish with herbs and cherry tomatoes before serving.
