Cheesecake is a popular dessert, which is a kind of cheese cake. It would seem that unsweetened cheese and sweet cake - how to combine this? It's just that for making cheesecake, you need to take cream cheese with a soft creamy consistency. The classic New York cheesecake is prepared with Philadelphia cheese. It cannot be replaced with another cheese, as you will get a different taste of the dessert.

- Base ingredients:
- - 250 g of crackers;
- - half a glass of sugar;
- - 8 tbsp. tablespoons of butter;
- - 1/4 teaspoon of salt.
- Ingredients for the filling:
- - 300 g cherries;
- - 1/4 cup sugar;
- - half a glass of water;
- - 2 tbsp. tablespoons of lemon juice;
- - 1 tbsp. a spoonful of starch.
- Ingredients for the cream:
- - 240 g of Philadelphia cheese;
- - 5 eggs;
- - 3/4 cup sugar;
- - 3 tbsp. tablespoons of flour;
- - 1 teaspoon of orange and lemon zest;
- - 1/2 teaspoon of vanilla extract.

Step 1
Grind crackers into crumbs, mix with butter, salt.

Put the mixture into a mold, tamp it with your hands, spreading it along the bottom and walls, put it in the freezer while making the cream for dessert.

Put the oven to preheat to 270 degrees.

Use a mixer to combine flour, cream cheese, zest and sugar.

Drive eggs one by one into the cream, add vanilla, stir at low speed.

Pour the resulting cream over the base, bake in the oven for 12 minutes. Then reduce the heat to 90 degrees, cook for another 1 hour. Let the dessert cool in the air, put it in the refrigerator for 7 hours.

Now combine all the ingredients for the filling in a saucepan, heat, bring to a boil, cook for a few minutes, then cool.

Remove the cheesecake from the refrigerator, fill with cherry filling, let stand at room temperature.
