Potato pancakes with canned green peas, green onions and spicy sour cream sauce are a great breakfast for the whole family! For the preparation of such pancakes, as a rule, all the products available in each refrigerator are used. Therefore, it is a great way to have a hearty breakfast and unload the refrigerator.
Pancake Ingredients:
- 220 g mashed potatoes;
- 1 egg;
- leek;
- 1 tbsp. l. soy sauce;
- 2 tbsp. l. canned green peas;
- 3 tbsp. l. sifted flour;
- 50 ml. broth (beans);
- ¼ h. L. baking powder for dough;
- 4 tbsp. l. sunflower oil.
Ingredients for the sauce:
- 100 g sour cream;
- 1 tbsp. l. horseradish;
- 1 tbsp. l. soy sauce.
Preparation:
1. Put cold mashed potatoes in a bowl and knead well with a fork until smooth. Note that mashed potatoes do not need to be prepared specifically for pancakes. It is recommended to use leftover mashed potatoes from the refrigerator. This will not spoil the taste of the pancakes.
2. Finely chop the leeks with a knife and add to the puree. Drive 1 chicken egg there. Mix everything well, then top up with bean broth and soy sauce and mix again.
3. Then add flour, baking powder and peas into the potato mass. If necessary, add salt and mix gently. You should not add a lot of salt, because soy sauce can completely replace it.
4. Pour sunflower oil into a frying pan and heat it well. Then put the prepared dough into the hot oil with a tablespoon, giving it the shape of pancakes.
5. Fry on both sides until tender, like ordinary pancakes. This procedure should be done until the potato dough runs out. As a result, you should get about 15 pancakes.
6. In a bowl, mix sour cream, horseradish and soy sauce. Sprinkle it with chopped onion (possibly dill) and serve with potato pea pancakes.
