Lentil puree soup is a popular Turkish dish. Lentils have a lot of useful trace elements for the human body. It is rich in protein, iron, folic acid. Therefore, if you are fasting or just like healthy food, then you will surely like this soup. In addition, due to its taste, this dish can please not only adults, but also the smallest gourmets.
It is necessary
- - Red lentils - 100 g;
- - Potatoes - 2 pcs.;
- - White onion - 1 pc.;
- - Large tomato - 1 pc. or tomato paste - 2 tbsp. l.;
- - Garlic - 2 cloves;
- - Large carrots - 1 pc.;
- - Butter - 50 g;
- - Flour - 1 tbsp. l.;
- - Lemon - 1 pc.;
- - Ground black pepper;
- - Salt;
- - Greens to taste;
- - Hand blender.
Instructions
Step 1
Pour the lentils into a bowl, cover with cold water and leave for 2 hours. While it swells, you can prepare the vegetables. Peel the potatoes, white onions, carrots and garlic and cut into small identical cubes.
Step 2
After the time has passed, drain all the liquid from the bowl of lentils and rinse the cereals under running water. After that, transfer it to a saucepan and pour in 1200 ml of cold water. When the water comes to a boil, reduce the temperature to low and cook with the lid closed. After 20 minutes, add the potato cubes to the pot.
Step 3
While the potatoes and lentils are boiling, we will fry in butter. Take a frying pan and put a piece of butter in it. When it's melted, place the chopped onions and carrots. Fry them for about 10 minutes until the carrots are half cooked. Add tomato cubes or tomato paste, flour and cook for another 2-3 minutes.
Step 4
Transfer the finished frying to a saucepan with lentils and potatoes, adding chopped garlic, black pepper and salt to taste. Cook for another 5 minutes, then remove the pan from the stove and whisk the soup with the hand blender in mashed potatoes.
Step 5
Cut the lemon into circles and place them in a plate. Squeeze 5-6 drops of juice from one mug and pour them into a saucepan with lentil puree soup. Pour the finished dish into portions and serve along with chopped lemon pieces and chopped herbs.
