Chorizo is a savory pork sausage variety that is very popular in Portugal, Spain and Latin American countries. You can also find this sausage on sale here. Chorizo and squid make an excellent salad, complemented by a mango sauce.

It is necessary

  • For four servings:
  • - 300 ml of olive oil;
  • - 280 g squid;
  • - 240 g of young potatoes;
  • - 200 g mango;
  • - 160 g canned artichokes;
  • - 120 g salad mix;
  • - 40 g chorizo;
  • - pepper, salt.

Instructions

Step 1

Rinse the young potatoes, they do not need to be peeled. Boil the potatoes until tender, cut each potato in half.

Step 2

Puree the mango pulp using a blender, add 280 ml of olive oil, stir. The mango sauce is ready.

Step 3

Peel the squid and cut each canned artichoke into six pieces. Cut the chorizo into thin slices. Salt and pepper the potatoes, artichokes and squids, but do not mix together yet.

Step 4

Add a spoonful of olive oil to a hot frying pan, fry the potatoes with artichokes, add the squid after a couple of minutes, and after another minute add the sausage. Leave on the stove for a minute, turn off the heat.

Step 5

Place the mango and butter sauce on a plate, top the contents of the pan. Tear the salad mixture (corn, arugula, frieze, radicchio) on top of the salad with your hands. The squid and chorizo salad is ready.
