Beef with horseradish and apple sauce is prepared according to the classic recipe of Russian cuisine. This is a very satisfying and delicious dish. The pungency and sourness of the meat is given by the sauce with which it is served.

- • 500 g of beef;
- • 1 onion;
- • 1 PC. carnations;
- • parsley root;
- • Bay leaf;
- • black peppercorns.
- For the sauce:
- • 1 apple;
- • 1-2 teaspoons of broth or cream;
- • grated horseradish;
- • vinegar (9%) and vegetable oil
- salt
- sugar to taste.
Instructions
Step 1
Place a pot of water on a fire. While the water is heating, prepare the beef: wash it, remove the films and tendons. Cut the meat into pieces of any size.
Step 2
Place prepared beef in hot water. Peel the onion, parsley root, wash and chop.
Step 3
Wait for the water to boil and add the onion and parsley root to the beef pot. Reduce heat, cover the pot and cook the beef over low heat until tender.
Step 4
Make the sauce while the beef is boiling. Peel the apple, cut into four parts, remove the core and stalk. Grate the apple on a fine grater.
Step 5
Mix the grated apple with the prepared grated horseradish in a 1: 1 ratio. Take some broth from the saucepan where the meat is being cooked and refrigerate at room temperature. Add the cooled broth to the apple and horseradish mixture.
Step 6
Pour the cream into the sauce, stir. Add vinegar, vegetable oil, salt and sugar to taste and place the prepared sauce in the refrigerator.
Step 7
Check the doneness of the meat. If the beef is done, season with salt, add bay leaves, cloves and black peppercorns and cook for another ten minutes. Remove the beef from the pan and place it on a platter. Chill it a little and serve along with the apple and horseradish sauce.
Step 8
Serve fresh or boiled vegetables, potatoes, boiled rice with ready-made hot beef. Pour the sauce over it. Cold beef can be served without a side dish.
