Egg rolls with avocado and shrimp are a great cold appetizer. All ingredients complement each other perfectly. The dish is prepared quickly and easily. The specified amount of food is enough for 4 servings.

- - eggs - 4 pcs.;
- - milk 2, 5% - 3 tbsp. l.;
- - dill greens - 5-6 branches;
- - sunflower oil - 2 tbsp. l.;
- - shrimp - 200 g;
- - avocado - 1 pc.;
- - lemon - 1 pc.;
- - blue cheese - 100 g;
- - lettuce leaves - 6 pcs.;
- - salt - a pinch.
Instructions
Step 1
Cooking an omelet. Beat eggs with milk, salt. Rinse greens with water, remove coarse stems, finely chop. Add the chopped herbs to the egg mixture. Bake two omelets in sunflower oil (fry each omelet on both sides).
Step 2
Cooking the filling. Boil the shrimps, peel off the shell. Chop finely. Peel the avocado, remove the pit, mash the pulp with a fork. Drizzle the lemon juice over the avocado. Crumble the blue cheese. Combine shrimp, cheese and avocado, stir.
Step 3
Spread the filling evenly over the omelets and roll them up. Cut the rolls into portions. Place on lettuce leaves. The dish is ready.
