For a long time in Russia various pies have been baked, this is our national feature. There are many recipes for dough and fillings. One of the options is apple pies, the aroma of which is impossible to resist.

Instructions
Step 1
For sweet pies, yeast dough is prepared in a sponge way. Dissolve yeast, a tablespoon of sugar and a glass of flour in warm milk. The mixture should be like a pancake in consistency. Cover the dough with a towel and place in a warm place for 1.5-2 hours. It is considered complete when it reaches its maximum lift. Then the dough goes down and wrinkles appear on the surface.
Step 2
Mash eggs, sugar and salt in a separate bowl. Mix everything well. Melt butter or margarine in a water bath. Refrigerate to room temperature. Add butter and pounded eggs to the dough. Add flour gradually, while stirring thoroughly. Place the dough on the table and knead well. Sprinkle with flour to prevent it from sticking to your hands. Place the finished dough in a bowl and cover with a towel on top. Leave in a warm place for 2 hours.
Step 3
Divide the matched dough into small balls. Then roll them into tortillas and leave for a while.
Step 4
There are several ways to prepare the filling: - Remove the core from the apples, peel and cut into slices. When sliced like this, the fruit will not disintegrate, especially if the variety is sweet. Soak the wedges in cold, acidified or salted water for 5-10 minutes to keep them from darkening. - Cut the apple slices, sprinkle with sugar on top and sprinkle with whiskey or vodka. It is better to prepare such a filling in the evening. You can add dried apricots or raisins. - Peel the apple and grate it on a coarse grater. Pour lemon juice over the mass and sprinkle with sugar.
Remove the core from the top of the apple, leaving the base intact. Pierce the peel with a fork in several places. Then put the apples on a baking sheet and put a lump of sugar on top of the hole. Pour water into the bottom. Bake for half an hour. Use ready-made apples for mashed potatoes.
Step 5
Place the prepared filling in the middle of each tortilla and seal the edges. Put the pies on a baking sheet, brush with an egg on top. Bake in an oven preheated to 200C. Determine readiness with a wooden stick.
