  • For the meringue:
  • - 4 egg whites;
  • - 14 Art. tablespoons of powdered sugar.
  • For the cream:
  • - 250 g mascarpone;
  • - 4 st. tablespoons of powdered sugar, cream of 35% fat;
  • - 1 st. spoon of orange liqueur, orange peel.
  • Additionally:
  • - 200 g of seedless grapes;
  • - 25 g of chocolate;
  • - 1 tbsp. spoon of orange peel.

Instructions

Step 1

First, let's prepare the meringues. Separate the yolks from the whites. Beat the whites, slowly adding the icing sugar to them. Beat with a mixer on medium speed to form stable peaks. Take your time, the meringues should come out with a gentle, viscous center.

Step 2

Line a baking sheet with baking paper, use two spoons to spread the protein mass. You don't have to try too much - the appearance of the meringue does not play a special role here. Bake for 60-70 minutes at 120 degrees. Do not open the oven door during this time! The meringues appear soft at first, but after hardening they will become hard and crispy.

Step 3

Prepare the cream. Combine the mascarpone, cream, sugar, zest and liquor together. Beat everything with a mixer until smooth. Adjust the amount of cream based on the fat content of the cheese. The mass should be elastic.

Step 4

Take grapes without seeds and with a thin skin. Cut it into rings.

Step 5

Collect the cake. Place one layer of meringue on a flat dish, pressing them tightly together. apply the first portion of the cream, lay out some of the grapes. Apply the cream on top again. Repeat the layers in the same sequence. The third layer is meringues. Cover the cake with cream on all sides.

Step 6

Decorate the grape and mascarpone meringue cake with grated chocolate, grapes and orange zest. Leave the cake in the refrigerator for at least half an hour to soften the meringue, looking like toffee. If you like crunchy meringues, then serve the cake on the table right away.
