Merengi is an airy dessert made from whipped egg white. It can act as an independent delicacy, and it can also be used to decorate ready-made baked goods. Meringue cake turns out to be incredibly tasty with mascarpone cream.
It is necessary
- For the meringue:
- - 250 g mascarpone;
- - 250 g icing sugar;
- - 100 ml of dry red wine;
- - 75 g of strawberries;
- - 15 g of strawberries;
- - 10 g of amaretto liqueur;
- - 4 egg whites;
- - 1 egg yolk;
- - 1 lemon;
- - 1 lime;
- - 1 stick of cinnamon;
- - 3 carnations;
- - a pinch of salt.
- For mascarpone cream:
- - 250 g mascarpone;
- - 1 egg yolk;
- - 3 tbsp. tablespoons of powdered sugar.
- For wine sauce:
- - 100 ml of dry red wine;
- - 50 g of strawberries;
- - 15 g of strawberries;
- - 1 stick of cinnamon;
- - 3 carnation stars;
- - 1 tbsp. spoon of amaretto liqueur.
- For strawberry salsa:
- - 50 g of strawberries;
- - 1 lime;
- - 1 teaspoon of powdered sugar.
Instructions
Step 1
Mix egg whites with a pinch of salt, juice from 1 lemon, 220 g of powdered sugar, whisk everything thoroughly. On the parchment, draw 2 rectangles of the same size. Spread the protein mass evenly over 2 rectangles (leave about 3 tablespoons for the small meringues that will decorate the cake). Bake the meringues at 150 degrees for 40 minutes.
Step 2
Prepare the wine layer. Cut 100 g strawberries into slices. Put the strawberries in a saucepan along with the strawberries, cover with red wine, put on fire. Add a spoonful of powdered sugar, cloves, cinnamon, Amaretto. Cook for 30-40 minutes on low heat, then wipe through a sieve, put to cool in the refrigerator.
Step 3
Prepare mascarpone cream. Knock down the yolk with powdered sugar - you get a light mass. Mash the mascaropne, add the yolk mass to it, put it in the refrigerator.
Step 4
Spread one cooled meringue with mascarpone cream, then cover with wine sauce, cover with a second meringue.
Step 5
Make strawberry salsa. Cut 50 g of strawberries into small cubes, add a handful of chopped basil, 1 teaspoon of powdered sugar and 2 tbsp. tablespoons of lime juice. Marinate for 15-20 minutes. If there is a lot of juice, then just strain the excess.
Step 6
Decorate the finished meringue cake with mascarpone cream with small meringues. To do this, squeeze the egg mass onto the parchment through a pastry syringe with a beautiful nozzle, bake at 150 degrees for 40 minutes. Serve the strawberry salsa cake.
