Step 1

Ketchup is one of the classic sauces for meat, french fries and other dishes. It is most delicious from tomatoes ripened in the sun. Homemade ketchup can become a real hit at the upcoming grill party, besides, you will be absolutely sure of its naturalness and you can tell anyone who wants to know which products are included in the sauce.

First of all, peel the tomatoes, the easiest way to do this is by blanching. Dip the tomatoes alternately in boiling water for 2-3 seconds and immediately send them to a bowl of cold water. You just have to pry the skin with the edge of a knife, and it will come off quite easily.

Cut the tomatoes into 4 pieces, place in a blender, and puree. If you don't have a blender, you can simply mince the vegetables.

Pour the resulting mass into a saucepan, put on low heat, boil for 10 minutes with constant stirring.

Grind the garlic and onion with a blender or meat grinder, mix them with vegetable broth, vinegar, 1 tbsp. salt and pepper to taste.

Add this mixture to the boiling pot and continue to simmer over very low heat for another hour. Do not forget to constantly stir the future ketchup to prevent it from sticking to the bottom of the saucepan.

In principle, nothing else needs to be done. Turn off heat, let the ketchup cool, remove the first sample. Perhaps the taste will seem a little unusual to you, because this is just a base prepared with the addition of a minimum amount of spices. If you like a spicier version, you can add your favorite spices to the base - from basil to a couple of drops of Tabasco sauce.

Prepare small, clean jars, transfer the ketchup to them, and close the jars with lids.
