Savoyardi cookies are the basis of the famous Italian dessert tiramisu and some others. Usually these cookies are sold ready-made in the supermarket, but if you cannot buy them, you can try to bake the savoyardi yourself.

- White flour - 75 g.
- Powdered sugar - 75 g.
- Vegetable oil for lubrication
Instructions
Step 1
Separate the yolks from the whites as best you can. Both whites and yolks must be poured into a clean, dry container. Put the whites in the refrigerator for now. Add powdered sugar to the yolks and rub until a creamy, pale yellow substance is formed. Add the whole portion of flour to the yolk-sugar mass, mix well the thick dough. Set it aside and do the squirrels.
Step 2
Beat the cooled proteins with a mixer until they form peaks. Gradually add the whipped egg whites to the yolk dough, spoon by spoon. The movements when mixing proteins should be directed from bottom to top. Try to do everything carefully so as not to destroy the structure of the whipped protein. The resulting dough should be light and airy, but not runny, so you may not need all of the protein mass.
Step 3
Line a baking sheet with parchment, transfer the dough into a pastry syringe and place it on a sheet in the form of sticks 8-10 cm long. Sprinkle the cookies on top with powdered sugar through a strainer. Let the powder sink a little in the cookies and place the baking sheet in an oven preheated to 180 degrees.
Step 4
Cookies are baked very quickly, the first ready portion can be taken out in 15 minutes. Chilled cookies can be eaten just like that or used to make dessert.
