Mushrooms are a nutritious food that is rich in protein and many beneficial substances. In addition, mushrooms are easy to prepare. They can be used for making soups as well as main courses and snacks.
It is necessary
- For mushroom soup:
- - 400-500 g of fresh mushrooms;
- - 3 potatoes;
- - onion;
- - carrot;
- - 50 g butter;
- - 1/2 cup rice.
- For roast:
- - 1 kg of fresh or pickled mushrooms;
- - 0.5 kg of potatoes;
- - 250 ml cream;
- - 300 g of cheese;
- - a tomato;
- - garlic and herbs to taste.
- For pizza:
- - base for pizza;
- - 400-500 g of fresh or pickled mushrooms;
- - 2 tomatoes;
- - 3 tbsp. l. mayonnaise;
- - onion;
- - carrot;
- - 200 g of cheese;
- - a bunch of greens.
- For the pizza sauce:
- - 250 g sour cream;
- - a head of garlic.
Instructions
Step 1
Cook the soup. Mushroom soup is one of the healthiest soups, which, firstly, contains many vitamins, and secondly, it is very easy and quick to prepare. Any fresh mushrooms are suitable for making mushroom soup - it can be aspen mushrooms, boletus mushrooms, chanterelles, and even champignons, which can be bought at any time of the year in ordinary supermarkets. Cut the mushrooms into large pieces and dip in boiling salted water. While the broth is cooking (15-20 minutes), peel the potatoes and cut them into small cubes. Then, peel the onions and carrots. Melt a piece of butter in a skillet and fry the finely chopped onions and grated carrots in it. Add rice to the boiling broth and simmer for 10 minutes. Then add the potatoes and leave for another 10 minutes. When the potatoes are tender, add the onion and carrot stir-fry, herbs and seasonings. Stir well and simmer, covered, for about 5 minutes. Mushroom soup can be served with sour cream and fresh herbs.
Step 2
Cook your roast. Roast with mushrooms and potatoes is a very simple, tasty and satisfying dish. It is noteworthy that it can be cooked both in the oven and in a conventional microwave if you have a special glass or earthenware dish with a lid. Any mushrooms will suit you - both fresh and pickled. Cut them into medium slices. If you are using small pickled mushrooms, such as honey mushrooms, you can put them in whole. Peel the potatoes and cut into slices. Add chopped herbs and garlic to the cream, season with salt and pepper. Grate the cheese on a coarse grater. Take a deep dish and start laying out the layers for the roast. Brush the bottom with butter and add a third of the mushrooms. Place a layer of potatoes on top. Pour the third cream over the potato-mushroom layers and sprinkle with some of the cheese. Top with mushrooms again, then potatoes, then pour cream over the dish again and sprinkle with cheese. Lay out the last layers of mushrooms and potatoes, pour over the rest of the cream and cover them with the rest of the cheese. To decorate and improve the taste, you can put a tomato cut into circles on top. Place in oven or microwave for 40-60 minutes. The dish is considered ready when the potatoes are baked.

Make a pizza. Vegetarian pizza with mushrooms is a favorite dish not only for those who have given up meat, but also for everyone who loves mushrooms and vegetables. If you have mushrooms at home and you don't know what to do with them, the answer is simple - make a pizza. The pizza base can be bought ready-made. Brush it generously with mayonnaise and top with the tomatoes, cut into thin slices. Top with finely chopped mushrooms and vegetables. To improve the taste, onions and carrots can be fried beforehand. Sprinkle herbs and finely grated cheese on the pizza blank. Place in the oven for 10-15 minutes. Serve the pizza with sour cream and garlic sauce, for which simply mix the sour cream with finely chopped garlic.
