Kholodnik is a popular summer soup that can be prepared with kefir or beetroot broth. Beetroot cooler is sometimes also called Belarusian okroshka. This soup is made quickly from available ingredients. The fridge will become your favorite dish on a hot summer day.

It is necessary

  • - 2 large beets;
  • - 1 medium bunch of green onions;
  • - 1 bunch of fresh dill;
  • - 1 lemon;
  • - 4 eggs;
  • - 3-4 cucumbers;
  • - 1 liter of kefir;
  • - 500 ml of cold water;
  • - salt to taste.

Instructions

Step 1

Wash the beets, put in a saucepan and put on the stove, boil in a peel and cool. Cut off the peel from the finished beets and rub on a coarse grater.

Step 2

Put the eggs in water and cook for 10-15 minutes, cool and grate.

Step 3

Wash the onion and dill thoroughly, dry and chop finely.

Step 4

Wash cucumbers and chop finely. If young cucumbers have a thick peel, then it must be cut off first.

Step 5

Mix the grated eggs, beets, herbs and cucumbers in a large bowl or saucepan.

Step 6

Add kefir and cold water. Mix everything thoroughly. Squeeze the juice out of the lemon and fill the soup. Salt to taste.

Step 7

Before serving, the soup should be cooled in the refrigerator for 1, 5-2 hours.

Step 8

This summer soup can be served with hot boiled potatoes. Ready soup can be additionally garnished with green onions.

Step 9

Chill is a light soup, it is easy to digest and is perfect for those who follow their figure. Boiled beets can be substituted for pickled beets. Traditionally, this soup is prepared without meat products, but if desired, you can add chopped sausage or ham to it.

This soup belongs to the national cuisine of Eastern European countries; similar soups are popular in Belarus, the Baltic States and Poland.
