Ingredients

- milk, 500 ml;

- yeast, 1 sachet;

- sugar, 1 tbsp. the spoon;

- flour, 1, 6 kg;

- butter, 200 grams;

- vanilla sugar, 1 tbsp. the spoon;

- nutmeg, 1 tsp;

- semolina for sprinkling;

- icing sugar;

- lemon juice, 1 tsp

It is necessary to prepare for baking Easter cake in the evening. To do this, separate the whites of two eggs and send them to cool in the refrigerator.

Break the remaining 8 eggs, salt and leave to stand in the kitchen until morning. This procedure will make the yolks brighter, and the cake, accordingly, will be more beautiful.

Heat the milk, but do not bring it to a boil. It should be warm. Dissolve yeast, one spoonful of sugar and about 5 tablespoons of flour in it. When finished, put the milk in the heat to ferment.

Take previously cooked eggs, pour in the previously melted butter, add vanilla sugar and nutmeg.

The dough has already come by this time, so add the mixture you have prepared to it.

Pour 1.5 kg of flour into a large bowl, pour in the yeast dough and start kneading until it stops sticking to the bowl. When the dough is done, add the raisins. If the dough seems too runny, add more flour.

In order for the dough to rise, the pan must be wrapped and placed in a warm place. You can even put a heating pad underneath if you want to, this will help keep you warm longer.

After the dough has risen, it must be kneaded again, and then sent to a warm place until it rises again. Divide it into tins, pre-oiled and carefully sprinkled with semolina. Cover the molds with a towel and leave them warm for a while.

When the dough rises almost to the very top of the molds, send it to the oven at 200 ° C.

At first, you cannot open the oven, you must wait until the cake begins to bake.

If the top is ready and starts to burn a little, and the middle is still cheese, cover the cake with a sheet of paper. Check the readiness of the test with a wooden toothpick.

For the icing, beat the set whites with the icing sugar and lemon juice. After cooking, decorate the cake with it.
