Traditional Russian cuisine is rich in hearty dishes with meat in the recipe. The most delicious of them are those with pork, for example, "Roast".
Roast pork can be cooked in various ways: in the oven, in a pan, in a pot. You can choose any of them - the taste of the dish will remain invariably amazing.
The oldest recipe known today is roast from a whole piece of meat. Pork is baked over high heat until golden brown, which keeps the juice inside. Then salted potatoes are laid out on a pre-oiled baking sheet, and a piece of fried meat is carefully placed on top. All this is cooked in the oven for at least 40 minutes. When serving, the meat is cut into pieces, usually with mustard or horseradish.
It is best to use pork neck meat for roasts. It turns out to be very juicy and tender. Pre-clean the piece of film and tendons, and then dry with a paper towel.
A more sophisticated way to prepare roasts is with bell peppers. For him you will need: 600 grams of pork, 800 grams of potatoes, 40 grams of dried sweet pepper, a few cloves of garlic, onions, parsley, oil, salt and pepper. The dish is being prepared in a cast-iron cauldron.
Put the diced pork on the bottom of the cauldron along with finely chopped onions. Fry all this over high heat for about three minutes, and then another four - over low. After this time, add garlic to the mixture and cover everything with water. After the boil begins, add the potatoes, cut into medium-sized bars, and the bell peppers. The water level should be 3 cm higher than the ingredients. Then simmer the potatoes with meat under the lid for about 10 minutes. Then add the rest of the ingredients to taste and continue to simmer the stir-fry until the potatoes are cooked through.
Before cooking roast, the meat can be poured with lemon juice or white dry wine. Pork should be marinated for several hours. Best of all, such meat is cooked in pots, a cauldron or any other cast-iron dish.
But adding mushrooms to a roast, you can get a delicious dish with an amazing aroma. And while cooking it is very simple. To do this, you will need: half a kilo of pork and potatoes, 300 grams of boiled mushrooms, 200 grams of cream, 20 grams of mayonnaise, 10 grams of mustard, herbs, salt, spices and, of course, vegetable oil.
Before cooking roast, you need to thoroughly prepare the meat, that is, marinate it with a mixture of mayonnaise, mustard and spices. Cut the pork into small pieces and place in a deep bowl with this mixture for an hour and a half. Next, finely chop the onion and fry it until golden brown in vegetable oil. Then add coarsely chopped mushrooms to it, salt and pepper. Fry the pork too until a blush appears.
Then prepare the roast dish. Brush it with a little oil and then lay out the roast in layers. The first layer will be potatoes, which are sliced, salted and peppered, the second will be roasted pork, the third will be mushrooms, and finally the fourth will be another layer of potatoes. Pour all this abundantly with cream, cover with foil and place in an oven preheated to 180 degrees Celsius for about an hour.
Serve the cooked roast only hot. Sprinkle fresh herbs over the top to give the dish an aesthetically pleasing look.
