Vietnamese rolls are a great option for a light summer dish made with shrimp and rice paper. A distinctive feature of this recipe is the special peanut sauce served with the rolls.

It is necessary

  • To make peanut sauce:
  • - 1/3 glass of water;
  • 3/4 cup peanut butter
  • - 3 tbsp. spoons of soy sauce;
  • - 2 tbsp. tablespoons of freshly squeezed lemon juice;
  • - 1 tbsp. a spoonful of sugar;
  • - 1/4 teaspoon of ground chili;
  • - 1/2 teaspoon toasted sesame oil.
  • To prepare rolls:
  • - 200 g of rice noodles or sushi rice;
  • - 24 peeled prawns (medium size);
  • - 16 sheets of rice paper;
  • - 1 bunch of fresh mint leaves;
  • - a few sprigs of fresh cilantro;
  • - 1 chili pepper;
  • - 1 fresh cucumber;
  • - 1 bunch of green onions;
  • - a few lettuce leaves;
  • - basil.

Instructions

Step 1

First, let's prepare the peanut roll dressing. To do this, you need to mix all the specified ingredients and leave the sauce to infuse.

Step 2

Fill a medium saucepan with water and bring it to a boil, then put the shrimps in the water and cook them for 2-3 minutes. Drain and cool the shrimp in cold water. We transfer the shrimp to a paper towel to remove excess moisture from them. Cut the shrimp into 2 parts, wrap it with cling film and put it in the refrigerator.

Step 3

Fill a wide bowl with hot water, then dip the rice paper into it for 20-25 seconds so that it becomes soft and elastic. Put the softened rice paper on a paper towel.

Step 4

Now let's start preparing the rolls. Take one sheet of rice paper and place 3 cut shrimps in one row in the center. Leave approximately 1 cm of free space on each side of the paper. Next, lay out the finished rice noodles or sushi rice, basil, mint leaves, a small piece of chili pepper. Place the cucumber and onion cut into strips on both sides of the rice or noodles. Cover everything with one leaf of lettuce on top.

Step 5

We begin to wrap the rice paper so that all the ingredients are inside the roll. You can use a bamboo mat if needed. Cover the rolls with cling film and let them brew for 2 hours.

We lay out the finished dish on plates, grease with peanut sauce and serve.
