Minestrone is a classic Italian soup. It is made from seasonal vegetables with the addition of pasta. The dish turns out to be very satisfying and healthy.
It is necessary
- - 2 chicken breasts (fillets);
- - 2 medium-sized carrots;
- - 1 red onion;
- - 2 celery stalks;
- - 1 small forks of cauliflower;
- - 1 cube of chicken broth;
- - 150 g of pasta;
- - 100 g of rice;
- - 200 g frozen green peas;
- - 150-200 g broccoli (fresh or frozen);
- - 200 g spinach;
- - 35 g smoked bacon;
- - olive oil;
- - rosemary, salt, pepper.
Instructions
Step 1
Cut the bacon into thin strips. Pour 2 tbsp into a preheated saucepan. tablespoons of olive oil. Place the bacon in a saucepan, followed by the rosemary. Fry the bacon for 2 minutes over medium heat until crispy, then transfer to a bowl.
Step 2
Cut carrots, onions and celery into thin slices and place them in the saucepan in which the bacon was fried. Season the vegetables with a pinch of salt and pepper, then crush the chicken stock into a cube.
Step 3
Finely chop the cauliflower and broccoli and add to the saucepan with the vegetables. Mix everything.
Step 4
Let the vegetables fry for literally 2 minutes and pour 1.5 liters of boiling water into a saucepan. Let the vegetables simmer over moderate heat for about 5 minutes.
Step 5
Next, add prepared chicken breasts, pre-cut into large pieces, as well as pasta and rice to the soup.
Step 6
After 10 minutes, add frozen green peas and chopped spinach to a saucepan. Place the lid on the pot and cook the soup for another 5 minutes.
Step 7
If the soup is too thick, add a little boiling water and boil. And before serving, put the pieces of bacon with rosemary in the soup.
