An eggplant appetizer will serve as an excellent appetizer for any table, despite the fact that it is quick and easy to prepare.
Ingredients:
- Eggplant - 2-3 pcs. medium size;
- Peeled walnuts - 100 g;
- Garlic - 4 cloves;
- Mayonnaise - 2 tablespoons;
- Cilantro - 1 bunch (you can also take dill and parsley greens);
- Vegetable oil;
- Salt and pepper to taste;
- Lettuce leaves.
Preparation:
- Eggplants need to be washed, dried and cut into rings 4-5 mm thick. Salt them and leave for 15 minutes. They will let the water in and the excess bitterness will go away from them. It remains to season them with pepper a little.
- Now you need to get out the baking sheet and grease it with vegetable oil. Then put the eggplant circles on it and bake them in the oven for about half an hour. The temperature should be around 180 degrees.
- You can simply fry the eggplants in a pan on both sides, but since they absorb a lot of oil, they turn out to be less greasy when baked in the oven.
- Let's make the filling. Chop nuts and garlic. You can just use a knife, or you can turn it in a meat grinder or chop it with a blender. Add chopped herbs and season with mayonnaise. Mix everything well and put in the refrigerator for 15 minutes.
- It remains to arrange the dish for serving. Put lettuce leaves on a plate. Top with eggplant circles and distribute the filling on each. Eggplant can be garnished with herbs, pomegranate seeds, or cherry tomatoes. The appetizer is ready.
It should be noted that the filling can be changed to suit every taste. You can get by with a cheese and garlic filling. And you can make a mushroom. Such a dish will definitely not leave any of the guests indifferent.
