Summer is the best time for light meals. Seasonal vegetables can make a great base for healthy meals that cook very quickly. This flaky dish is reminiscent of lasagna, but lacks heavy pasta and cheese. Best served with a slice of toasted bread.
In order to prepare a puff dish of vegetables with herbs, you will need any combination of the following ingredients:
- tomatoes;
- green or onions;
- zucchini or zucchini;
- eggplant;
- bell pepper of any color;
- chili pepper (to taste);
- fresh basil;
- 2-3 cloves of fresh garlic;
- about 50 ml of olive oil;
- salt and pepper to taste.
1. Preheat oven to 220 ° C. Wash vegetables and herbs. Peel the eggplant. If it is a Japanese mini eggplant, you do not need to peel the skin. Peel the onions and garlic.
2. Cut the vegetables into slices about half a centimeter thick. Chop the herbs coarsely. Chop the garlic finely.
3. Combine crushed garlic with olive oil. Sprinkle some of the oil on a baking dish.
4. Lay vegetables, oil, herbs, salt, pepper on a baking sheet until the dish is full to the brim. The volume of the dish will be reduced by about half during cooking. Put in an oven preheated to 220 ° C for 15 minutes, then reduce the heat to 200 ° C and leave for another 20 minutes. Turn off the oven and leave the mold in it for 30-45 minutes. The resulting dish can be served warm or at room temperature.
