Kharcho is a Georgian dish; it is a hearty and aromatic meat soup. It can be made with beef, lamb and chicken. The dish is prepared with an abundance of spices and lots of herbs.
Ingredients:
- 450 g of beef or other meat;
- 2-3 onions;
- 1/3 cup rice
- 450 g tomatoes;
- 1 clove of garlic;
- spice;
- greens.
Preparation:
- The first step is to prepare the broth. The meat must be separated from the bones and then cut into small pieces. We put everything in a saucepan: meat and bones. Fill with 2.5-3 liters of water. Now we put the pan on the fire.
- You must wait until the water boils. Then you should remove the foam and reduce the heat to a minimum. The meat should be cooked for about an hour, as long as possible. Half an hour before the meat is ready, it is worth adding salt to the broth. At the end of cooking, you need to remove the bones and meat and strain the broth.
- Then you should finely chop the onion and fry it in a pan over low heat. At the same time, it should remain soft. After the onion acquires a light golden color, add the meat from the broth to it and fry a little.
- Then add a few spoons of broth and simmer the meat for 10-15 minutes.
- At this time, we will prepare the tomatoes. They need to be washed and cuts made on the "butts". Then the tomatoes are poured with boiling water. Remove the skin from them and cut into small cubes. Add the tomatoes to the meat in the pan and simmer again for 15 minutes.
- We put everything in the pan into the broth. We add a little fire so that it boils. After boiling, add rice.
- After boiling, you can reduce heat and add spices. Finally, add chopped garlic and herbs. After cooking, the soup must be left to infuse a little. Then you can serve it on the table.
