Parisian chicken with rice is a French dish. Thanks to the sauce, the dish turns out to be juicy, tender, aromatic and very tasty. As a side dish, you can serve: rice, buckwheat, potatoes, pasta.
It is necessary
- - 1 egg
- - 40 g flour
- - 150 g sour cream
- - 50 g butter
- - 250 g of rice
- - 1 onion
- - 2 pcs. carrots
- - 2 pcs. leek
- - hen
- - 100 g champignons
- - a pinch of nutmeg
- - 1 egg yolk
Instructions
Step 1
Rinse the leeks, carrots and onions first. Then peel the carrots and cut into quarters, leaving the white part for the leeks. Chop the onions finely.
Step 2
Rinse the chicken well. Then pour over the chicken and vegetables with cold water, pepper and salt to taste, add bay leaves, parsley, and basil. Put on fire and cook for an hour.
Step 3
Take a frying pan, pour in vegetable oil and add rice, fry it until golden brown. Add chicken stock; it should cover the rice completely.
Step 4
Peel the champignons, cut and fry in vegetable oil.
Step 5
Prepare the sauce. Melt the butter over low heat, add flour, stirring occasionally, cook until the mixture begins to foam. Then add 0.5 l of chicken stock and cook for 7-10 minutes. Add sour cream and mushrooms, mix well and cook for another 3-5 minutes. Remove sauce from heat, add egg yolk and a pinch of nutmeg.
Step 6
Cut the chicken into portions, lay out the rice, pour the sauce over the chicken and serve.
