Step 1
Rinse the zucchini, trim off the edges and loosen the center flesh. It will be more convenient if you use a device specially designed for this.
Remove toasted edges from slices of bread and place them in water or milk. Leave to soak.
Step 2
In a bowl, stir in the minced meat, egg, grated Parmesan cheese, and finely chopped parsley. Add salt and pepper. Squeeze the excess liquid out of the bread, mash and transfer to the minced meat. Stir the filling very well.
Step 3
Peel, chop and sauté the onion and bell pepper. Fry with a little vegetable oil in the pan. Wash the tomatoes, grate or chop finely. Add chopped tomatoes to a skillet with onions and bell peppers. Salt. Cook for 5 minutes. If the tomatoes are not very meaty, simmer for longer. You should get an almost homogeneous gruel. Pour in the wine, simmer until it evaporates by half.
Step 4
Stuff the zucchini with the filling you prepared earlier. Place the minced meat as tightly as possible. Then transfer the zucchini to the wine and tomato sauce and simmer for another 20-25 minutes over low heat. The pan must be covered with a lid. Stuffed zucchini is served hot.
