Homemade roll with delicious berry filling is a great dessert for a light lunch or tea. One of the most delicious options is a raspberry roll with butter cream. It cooks very quickly, and each serving contains quite a moderate amount of calories.

It is necessary

  • For biscuit:
  • - 6 eggs;
  • - 75 g of sugar;
  • - a pinch of vanillin;
  • - salt;
  • - 50 g of starch;
  • - 50 g flour;
  • - soda.
  • For filling:
  • - 200 g of thick raspberry jam;
  • - 250 g fresh raspberries;
  • - 0.5 liters of cream;
  • - 6 g of gelatin;
  • - 1 tablespoon of sugar;
  • - 1 teaspoon of powdered sugar.
  • For glaze:
  • - 100 g of white chocolate without additives;
  • - 2 tablespoons of cream.

Instructions

Step 1

To make the raspberry roll, you need fresh, undamaged berries. Sort them carefully and sprinkle on a platter to keep them in shape. Leave a few especially large and beautiful berries to decorate the roll.

Step 2

Make a biscuit dough. Separate the yolks from the whites and mix them with the sugar and vanilla. Mash the mixture thoroughly until the sugar is completely dissolved. Pour baking soda, flour and starch into the yolks. Mix everything. Beat the whites into a firm foam and add them in portions into the dough. Line a baking sheet with baking paper and spread the batter on top of it. Bake in an oven preheated to 200C until golden brown.

Step 3

Soak gelatin, squeeze and dissolve in 3 tablespoons of hot water. Whisk the cream and icing sugar and mix with the gelatin.

Step 4

Remove the baked biscuit from the oven, remove from the baking sheet and remove the paper. Be careful not to break the cake. Brush the crust with pre-warmed raspberry jam. Top with whipped cream and fresh raspberries. Using a towel, gently roll the filled crust into a roll. Wrap the finished roll tightly with a cloth and place in the refrigerator for 1 hour.

Step 5

Before serving, take out the roll, unfold and place on a dish. Sprinkle with powdered sugar and garnish with raspberries and fresh mint leaves.

Step 6

Prefer a chocolate-coated roll? Melt the white chocolate in a saucepan, add a couple of tablespoons of cream and mix thoroughly. Pour melted chocolate over the finished roll and leave to solidify.
