Pancakes are a great breakfast dish. Fritters can be prepared in different ways, for example, from zucchini or kefir. Scottish pancakes turn out to be very tender and at the same time satisfying.

Ingredients:

  • Eggs - 6 pcs;
  • Butter - 100 g;
  • Water - 300 g;
  • Flour - 100 g;
  • Whipped cream - 300 g;
  • Vanilla sugar - ½ tsp

Preparation:

  1. The recipe for Scottish pancakes, of course, resembles the preparation of ordinary pancakes, but there are subtleties and secrets here. You need to melt the butter and add flour and water to it, mix well. The mixture must be boiled over low heat until it thickens.
  2. After the mixture has thickened, remove the pan from the heat and cool slightly, stirring continuously. Add egg yolks to the cooled mixture, which must be separated from the proteins, while continuing to stir the mass.
  3. Now you need to whip the cream. Beat the separated egg whites until peaks form. Then you need to mix the whipped cream with the prepared dough, add the egg whites to them. Place the vanilla sugar in the pancake dough.
  4. With the help of a tablespoon, pour the mass for pancakes onto a preheated and always greased frying pan. However, frying pancakes only needs to be done on one side. Pancakes fried on one side should be folded uncooked sideways to each other. Put the resulting structures on a heat-resistant dish. If you do not plan to serve pancakes immediately, then they can be frozen.
  5. Before serving, you need to warm up the oven, the optimal temperature will be 200 degrees. Bake pancakes in a preheated oven for about 10-12 minutes. During cooking, the pancakes should rise (like a soufflé).
  6. Serve hot, sprinkle with a couple of teaspoons of powdered sugar. The best companion for pancakes is jam.
