  • - 50 g butter

  • - 100-150 g of tarragon greens
  • - 200 g of parsley
  • - 90-150 g green onions
  • - 100-150 g green basil
  • - 50 ml balsamic vinegar

Step 1

Let's make a side dish of herbs. Wash all the greens thoroughly, dry them on paper towels. Grind the basil with a blender in mashed potatoes, add olive oil, leave for 7 minutes, then pour balsamic vinegar, mix. Thinly chop the green onion, parsley and tarragon, mix with arugula and basil puree, add salt and pepper.

Let's make the sauce. We will disassemble the cabbage into inflorescences, put it together with the almonds in a saucepan with boiling, salted water and cook for 9-13 minutes, then put it in a colander. Peel the almonds, grind with a blender together with cabbage into a uniform consistency. Add salt, pepper, butter and mix.

Wash the pork, dry it, cut it into 4 pieces. Rub them with salt and pepper, add olive oil and fry in a hot skillet, 4 minutes on each side. Move the pan into an oven preheated to 190 degrees, then bake for 10-17 minutes.
