Cooking food in an oven at medium temperatures is a good cooking method. Pork cooked in this way is soft, juicy and appetizing. Cabbage-almond sauce goes well with baked pork and adds an unusual taste and aroma to the dish.
It is necessary
- - 700-750 g pork ham
- - 150-200 g of cauliflower
- - 30-60 g of almonds
- - 50 g butter
- - 100-200 ml of olive oil
- - salt
- - pepper
- - 80-150 g arugula
- - 100-150 g of tarragon greens
- - 200 g of parsley
- - 90-150 g green onions
- - 100-150 g green basil
- - 50 ml balsamic vinegar
Instructions
Step 1
Let's make a side dish of herbs. Wash all the greens thoroughly, dry them on paper towels. Grind the basil with a blender in mashed potatoes, add olive oil, leave for 7 minutes, then pour balsamic vinegar, mix. Thinly chop the green onion, parsley and tarragon, mix with arugula and basil puree, add salt and pepper.
Step 2
Let's make the sauce. We will disassemble the cabbage into inflorescences, put it together with the almonds in a saucepan with boiling, salted water and cook for 9-13 minutes, then put it in a colander. Peel the almonds, grind with a blender together with cabbage into a uniform consistency. Add salt, pepper, butter and mix.
Step 3
Wash the pork, dry it, cut it into 4 pieces. Rub them with salt and pepper, add olive oil and fry in a hot skillet, 4 minutes on each side. Move the pan into an oven preheated to 190 degrees, then bake for 10-17 minutes.
Step 4
Put greens on a flat dish. Add pieces of pork, pour cabbage and almond sauce.
