Appetizing flan, decorated with juicy kiwi, bright strawberries, grapes and apricots, a favorite dessert of many. For a light and surprisingly refreshing cake, you can choose the fruit of your choice.

- For the cake:

- - 150 g butter;
- - 2 tablespoons of fine crystalline sugar;
- - 1 egg;
- For the custard:
- - 50 g of sugar;
- - 3 yolks;
- - 2 tablespoons of flour;
- - 2 tablespoons of starch;
- - 325 ml of milk;
- - 1 teaspoon of vanilla extract;
- For fruit filling and frosting:
- - 500 g of a mixture of fresh fruits (kiwi, strawberries, red grapes without apricot seeds);
- - 125 g apricot jam or preserves;
- - 1 tablespoon lemon juice and water;
Instructions
Step 1
Prepare the dough. Sift the flour into a bowl, crush it with chilled butter cubes into fine crumbs. Shake the egg and stir in the mixture, add sugar.
Step 2
Knead a soft dough. First, stir everything with a knife with a rounded tip, and then knead the dough with your hands. Wrap it in cling film and refrigerate for 30 minutes.
Step 3
Preheat oven to 190 ° C. Place the dish on a baking sheet. Roll out the dough on a floured surface and place it in a quiche dish (deep round, 20-25 cm in diameter with vertical corrugated sides). Cut off the excess around the edge.
Step 4
If using a regular round shape, line the bottom of the pan with dough and make sides 4-5 cm high. Cover the dough with baking paper and add dry beans. Bake the crust for 15 minutes.
Step 5
Remove the bean paper and bake for another 5-10 minutes until golden brown. Allow the cake to cool completely in the mold, then transfer to a serving platter.

Make a custard. Whisk the yolks and sugar until smooth. Sift flour with starch on top and stir until a smooth paste is obtained.
Step 7
Heat the milk to a near boil and pour it into the yolk cream in a thin stream, rubbing it constantly with a spatula or whisk. Place the bowl of cream on the stove and simmer over medium heat, whisking continuously until the cream thickens and becomes smooth.
Step 8
Remove from heat and whisk in vanilla extract. Pour the cream into a clean dish, cover it with cling film and let the cream cool.
Step 9
Beat the cooled cream with a whisk until it becomes a little runny, and spoon onto the finished crust. Peel the kiwi and cut into slices, cut the strawberries and large grapes in half, cut the apricots into slices.

Spread the fruit in circles on the cream. Make the frosting. Heat jam (jam) with lemon juice or water and rub through a sieve while still hot. Spread the frosting over the fruit and let it cool and harden.
