It is customary to call rainbow a mixture of white, black and red beans. You can cook many different tasty, and most importantly, healthy dishes from it, because this product is rich in vitamins, trace elements and well-absorbed protein.

Beans can be used to prepare various side dishes, snacks or complete meals, because this product is extremely satisfying. However, before that, it is important to boil it properly. To prepare healthy "rainbow" beans, you will need: 200 g of white beans and 100 g of red and black beans, 1/4 each of parsley and celery roots, carrots, red onions, 1 teaspoon of sugar, vegetable oil, salt to taste.

Place the red and black beans in a bowl, pour over cold water and leave for 8-12 hours, changing the water periodically. White beans should be soaked 2-3 hours before boiling, as they usually cook much faster. After the allotted time, the product must be drained, rinsed and, spread out in different saucepans, put to boil, adding sugar to the water. The latter should be three times larger than the beans, since they increase quite strongly in volume.

Soaking is necessary not only to soften the beans, but also to remove oligosaccharides from them, which can lead to bloating and digestive problems.

White beans are usually cooked for 30-50 minutes after boiling, while red and black beans take 40-60 minutes. In any case, it is important to try it first - the finished product should be soft. Salt the beans 15 minutes before the end of cooking, otherwise they will cook even longer. Then the water must be drained.

The roots should be peeled and grated, the carrots should be finely chopped. Then lightly simmer everything in vegetable oil, add spices, for example, coriander or nutmeg, black pepper. Add chopped red onion and mix with beans. Sprinkle the finished dish with fresh herbs.

It is useful to eat beans for disorders of the cardiovascular system, nervous overload, high blood sugar levels, disorders in the genitourinary system and weakened immunity.

You can also make other appetizers from multi-colored beans. To do this, boil a glass of different beans in the manner described above, put them in a colander and cool. Then add a couple of chopped red onions, ½ cup sour tomato, 3 tbsp. tablespoons of vegetable oil, fresh parsley and cilantro. Mix everything, chill a little in the refrigerator and serve.

Another very tasty and beautiful dish is rainbow beans with walnuts in wine vinegar. To prepare this dish you will need: 200 g of boiled red, white and black beans, ½ cup of chopped walnuts, parsley, a pinch of saffron, 4 tbsp. tablespoons of wine vinegar, a pinch of basil, salt to taste.

Pour wine vinegar into a saucepan, add a pinch of basil, spices and bring to a boil. Then add chopped nuts, mix everything and remove from heat. Put the boiled beans in a salad bowl, add the herbs and mix everything with the walnut-vinegar mixture.

Beans with eggplants are very tasty and healthy. To prepare such a dish you will need: 150 g of beans of different colors, eggplant, onions, bell peppers, herbs, vegetable oil, 1 tbsp. spoon of tomato paste. The beans should be boiled, the eggplant should be cut into cubes and soaked in salted water for half an hour. Then it must be fried in vegetable oil along with onions and bell peppers. Add salt, spices, beans, tomato paste and some warm water. Mix everything and simmer for 5 minutes. Sprinkle with herbs at the end.
