Meat rolls with different fillings cook quickly and are delicious. Plus, it's a terrific snack that you can whip up when unexpected guests arrive.
It is necessary
- Thinly sliced meat of your choice (corned beef, ham, pastrami, salami, etc. - all work well).
- Soft cream cheese, preferably with spices (Philadelphia or similar).
- Fresh basil (or other leafy ones to choose from: spinach, arugula, mint, dill, shiso, etc.).
- Seasonal vegetables (asparagus, cucumbers, carrots, bell peppers, cabbage, green onions, leeks, etc.).
- Seasonal fruits (apple, pear, mango, papaya, avocado, strawberry, peach, etc.).
- Canned fruits or vegetables (pickled peppers, fried tomatoes, kimchi, pickled daikon, etc.).
Instructions
Step 1
You can buy pre-spiced cream cheese, but it's easy to make your own. Simply soften the cream cheese by letting stand in a warm room, then blend a combination of any of the ingredients listed below. The meat roll recipe does not offer any specific ratio: just keep adding the ingredients until it tastes good to you!
Salted seasoning:
- Finely chopped or grated garlic
- Dijon mustard
- Finely chopped onion
- Worcester or soy sauce
- Chopped greens
- Smoked salmon
- Anchovy fillet puree
- Grated parmesan cheese
- Ground red pepper, smoked paprika, or other spices
Sweet seasoning:
- Fruit jam
- Honey
- Citrus zest
- Frozen and thawed berries, pureed
- Cinnamon, Jamaican pepper or other spices
Step 2
To curl the meat rolls, place the meat on a cutting board, place the basil about 1/4 way from one end, and then add whatever other ingredients you want to use on top of the basil leaf.
Step 3
Then pour the cream cheese down the line. Also note that placing the basil leaves upside down on the meat means they will fit nicely and bond more easily with cream cheese.
Step 4
While holding the meat, roll the meat rolls so that the filling is tightly wrapped.
Step 5
Now cut the stuffed meat rolls (each) into 2-5 pieces, about 1-1.5 cm long. Use a very sharp knife, and wipe the blade between the cuts to keep the edges looking nice and the cream cheese doesn't run out.
Step 6
Select a suitable sized dish and transfer the cut meat rolls to it. If they start to unfold, hold them together with toothpicks.
