Pay attention to the packing date. At times, this is critical when choosing a product. Since sturgeon is harvested for caviar from July to August, this delicacy, packaged in a different period, is subjected to long-term storage and freezing. Frozen caviar may not lose its nutritional properties, but the integrity of the shell of the eggs is disturbed by this. It becomes viscous and porridge-like.

Be aware that real black caviar, harvested in accordance with the requirements of GOST and without the use of preservatives, has a short shelf life and can be sold by weight only until the end of October. The same barrel product, but containing special additives, can be stored longer - up to eight months. As a rule, such caviar, packaged in the store, goes to the New Year's table.

When buying caviar by weight, try to convince the seller to allow you to try it. If it has a pronounced sour or rancid taste, then you should not buy this product. Ignore the seller's arguments that the bitterness comes from sea water and other explanations.

When buying caviar in a metal jar, pay attention to the integrity of the latter and the absence of swelling. When shaking the can, you may feel a jolt from the movement of the contents, but there should be no gurgling sounds. The numbers on the date of manufacture of the product should be squeezed out on the lid of the jar from the inside. If the extrusion of this element is made from the outside - know before you a real counterfeit.

When purchasing "black gold" in a glass jar, carefully examine the product. Eggs should not be bruised. A high density of eggs is a sign of good quality.

Only salt, vegetable oil, glycerin and antiseptics can be added to a product prepared in accordance with GOST. The presence of other components in the jar indicates its low quality.
