They can be served as a side dish or served on their own - for example, for a hearty breakfast or light dinner.

    • Zucchini fritters:
    • 700 g zucchini;
    • 2 eggs;
    • 10 tablespoons of flour;

    • Corn pancakes:
    • 400 g canned corn;
    • 1 red bell pepper;
    • 100 g flour;
    • 0.5 teaspoon paprika;
    • 1 teaspoon of baking soda;
    • 50 ml of milk;
    • 2 eggs;
    • salt;
    • ground black pepper;
    • vegetable oil for frying.
    • Carrot pancakes with apples and raisins:
    • 500 g carrots;
    • 2 sweet and sour apples;
    • 50 g seedless raisins;
    • 1 glass of kefir;
    • 1 egg;
    • 2 tablespoons of sugar;
    • 2 cups of flour;
    • 0.25 teaspoon of baking soda;
    • salt;
    • butter for frying.

Step 1

A simple and quick dish is zucchini pancakes. Peel the zucchini from the skin and seeds. Grate vegetables on a coarse grater, squeeze the resulting mass with your hands to remove excess liquid. Chop the dill and parsley finely.

Put the grated vegetables in a bowl, add eggs, salt, soda and flour, mix everything thoroughly. Pour chopped herbs into the mixture, add black ground pepper if desired. Heat the vegetable oil in a skillet and spoon the pancakes out, making sure they are the same size and not too large. Place the finished products on a plate and keep warm until serving. Serve them on portioned platters and eat with sour cream.

Pancakes can be prepared not only from fresh, but also from canned vegetables. Open a can of canned sweet corn, drain the liquid. Peel small bell peppers and chop finely. In a deep bowl, combine eggs with milk, add flour, paprika powder, salt, baking soda, ground black pepper, chopped bell peppers and corn. Stir the mixture thoroughly.
