Cod can be boiled, baked, or fried. We suggest you experiment with fish by cooking cod in tomato sauce with rosemary and prunes - it will turn out original, aromatic and satisfying.
It is necessary
- For four servings:
- - cod - 2.5 kg;
- - pitted prunes - 350 g;
- - one onion;
- - glass of water;
- - canned tomatoes - 1.5 kg;
- - balsamic vinegar, grape seed oil - 2 tbsp. spoons;
- - four stalks of fresh rosemary;
- - ground pepper, salt, olive oil.
Instructions
Step 1
Cut the onions into thin half rings. Grind the canned tomatoes in a blender until smooth. Cut the cod into medium pieces. Cut each prune into thirds.
Step 2
In a large skillet, heat the grape seed oil, add the onion, and fry for about six minutes. Pour in vinegar, fry for another half minute. Then add water, tomato puree, bring the mixture to a boil.
Step 3
Pepper and salt the cod to taste. Place in the sauce along with the rosemary and prunes, cover, cook for another fifteen minutes.
Step 4
Sprinkle the finished dish with olive oil, sprinkle with ground black pepper and send to the table. Enjoy your meal!
