Step 1
Put the necessary products on the table so that everything is at hand. Break eggs, chilled and fresh, into dry dishes. Add granulated sugar to them and beat with a mixer on medium speed. As soon as the sugar grains disappear, the mass will begin to double.

Add sour cream to the eggs and mix thoroughly. Sour cream, combined with beaten eggs, will acquire additional airiness and give the mixture whiteness and splendor.
Step 3
Sift the flour, combine with cocoa and add to the egg-sugar-sour cream mixture. It is desirable that the connection occurs gradually. Divide the cooked flour into several portions and stir gently after each addition until smooth and airy. The soda is quenched in lemon juice and saturates the dough with air bubbles, which is favorable for fluffiness.

The dough is laid out in a mold (preferably detachable, so that it is easier to remove after baking). Do not forget to grease the form with butter and sprinkle with flour or cover with paper.
