Home-cooked squash caviar is much tastier than store-bought caviar, and also does not contain any dyes and flavors. A delicious addition to almost any meat and chicken dishes.

3 kilograms of zucchini, 0.5 kilograms of onions, half a glass of sunflower oil, 250 grams of mayonnaise, 200 grams of tomato paste, 1 teaspoon of salt, 1 tablespoon of sugar, half a teaspoon of ground black pepper
Instructions
Step 1
Choose small squash. Rinse them under cold water, peel and cut into slices. Peel the onions, rinse under cold water and cut into quarters.
Step 2
Mince the onions and courgettes (you can also mince them in a food processor). If you want more uniform caviar, mince it 2-3 times.
Step 3
Pour the sunflower oil into the cauldron and fry the onions and zucchini over high heat. After 5 minutes, reduce heat and leave to simmer for 1.5-2 hours, stirring constantly.
Step 4
Add mayonnaise, tomato paste, pepper, salt and sugar. Stir well and simmer for another 30 minutes. Remove from heat and let cool slightly.
