For sweet pastries, fresh cherries are often used, but if they are not at hand, then the pie can also be made with sun-dried berries. Lemon zest and juice will add additional flavor to the baked goods.

- Ingredients for a silicone mold with a diameter of 18-20 centimeters:
- - dried cherries - 175 g;
- - butter - 175 g;
- - icing sugar or very fine sugar - 175 g;
- - 3 eggs;
- - 225 g flour;
- - half a teaspoon of baking powder;
- - juice and zest of 1 lemon;
- - 2 spoons of milk;
- - a tablespoon of any finely chopped candied fruit;
- - icing sugar for dusting.
Instructions
Step 1
Preheat the oven to 160 degrees. We remove the butter from the refrigerator in advance so that it softens. Put the dried cherries in a colander, rinse under warm water. We transfer the berries to paper towels so that they dry, then cut them into pieces of the same size.
Step 2
Sift the flour. Beat the softened butter with powdered sugar until a fluffy light cream. We drive in the eggs one at a time, adding a tablespoon of flour each time. Stir in lemon juice and zest.
Step 3
To prevent the cherries from settling on the bottom of the mold during baking, roll them in flour. Pour the remaining flour and baking powder into the egg-butter cream, add milk and berries, knead a homogeneous dough.
Step 4
We transfer the dough into a deep silicone mold with a diameter of 18-20 centimeters, level it, and make a small depression in the center. Sprinkle the cake with chopped candied fruits and put it in the oven for 80 minutes. After 60 minutes of baking, we begin to check the doneness regularly, since the baking time is individual for each oven. Determine the readiness of the cake with a wooden toothpick or skewer - it should remain dry and clean after piercing the center of the baking.

We take the finished cake out of the oven, leave it in the form for 15-20 minutes, and then transfer it to the wire rack to cool completely. Before serving, for beauty, sprinkle the cake with powdered sugar.
