It is necessary

    • For the test:
    • water - 2 glasses;
    • flour - 700 g;
    • yeast - 20 g;
    • sugar - 1 tbsp. l;
    • salt - 1 tsp;
    • vegetable oil - 2 tablespoons
    • For filling:
    • amber dried apricots - 1 kg;
    • sugar - 150 g

Instructions

Step 1

Prepare yeast dough in a sponge way. To do this, dissolve the required amount of yeast in warm (30 ° C) water and add half the flour and half the sugar. Place the dough for an hour and a half in a warm place and cover with a cloth so that it reaches and doubles in volume.

Step 2

When the dough rises, add salt, the rest of the flour, sugar, butter to it. Knead the dough so that it easily comes off the dishes and does not stick to your hands. After kneading, leave the dough to ferment for 1, 5–2 hours. During the rise of the dough, perform one or two kneading.

Step 3

After that, roll out the dough in the form of an oval, put it on a greased baking sheet, straighten it, pierce it in several places with a fork so that no blisters form on the cake when baking. Lay the transparent amber slices of dried apricots in an even layer, gently bend the side, brush with dried apricot syrup, decorate with dough flowers, which are also smeared with syrup, sprinkle with poppy seeds in the middle of the flower.

Prepare the filling as follows: wash the dried apricots, fill with hot water to cover the dried apricots, add sugar and simmer for about ten minutes until soft. Then fold in a sieve or colander and refrigerate.

Bake the cake prepared in this way at a temperature of 180-200 ° C until tender. As soon as the cake is browned, it is ready. At the baked pie, gently glaze the side and dried apricots with a brush (brush) with the syrup in which the dried apricots were cooked. Sprinkle the cooled pie with vanilla sugar and cut into squares or rectangles.
