In summer, when it is very hot outside, you really want to eat something light and cool. For example, a fragrant and thick zucchini soup.
It is necessary
- - zucchini - 3 pcs.,
- - vegetable or chicken broth - 1 l,
- - garlic - 2 cloves,
- - feta cheese - to taste,
- - fresh mint,
- - salt,
- - pepper,
- - ground nutmeg - to taste.
Instructions
Step 1
Prepare vegetable or chicken broth. Cut the peeled zucchini into small cubes, pour into a preheated pan with vegetable oil, add chopped garlic and fry until soft. Then grind the zucchini in a blender or just knead, if there are small pieces, it's okay.
Step 2
Add zucchini and mashed cheese to the boiling broth. Then add spices and finely chopped leaves
mint. Salt and pepper. Cook for 10 minutes over low heat, then remove from the stove. Cool the soup.
Step 3
When serving, add mint leaves, herbs, ground nutmeg, sour cream to taste. The soup can be served either slightly warm or cold.
