Small buns made from choux pastry and empty inside are what profiteroles are. And the filling already depends on the imagination of those who wish to taste this delicacy. In principle, they can have sweet, salty, and even meat filling. In this recipe, ice cream melting in your mouth acts as a filling for profiteroles.

- - 255 g of roasted hazelnuts;
- - 555 g of sugar;
- - 8 eggs;
- - 25 ml of vanilla extract;
- - 175 g butter;
- - 410 g of dark chocolate;
- - 55 ml of liquor;
- - salt.

Step 1
First you need to make ice cream. To do this, the hazelnuts must be peeled and chopped thoroughly. Boil one liter of milk in a small saucepan, turn off the heat. Take 3 eggs, mix them with half the sugar and then slowly pour in the hot milk.

Put the mixture on fire for about 4 minutes, but do not bring to a boil. Add vanilla and nuts to a saucepan, let cool and refrigerate for 5 hours.

Then transfer the chilled mass to a plastic container and put in the freezer for 3 hours, sometimes the ice cream needs to be stirred in order for it to be homogeneous.

To prepare the sauce, in a saucepan with a thick bottom, stir 1 cup of milk with the second half of the sugar, then add 2 tablespoons of butter and turn on a low heat.

After 12 minutes, put chocolate and vanilla, broken into pieces, into milk, cook until the chocolate is completely dissolved. Then pour in the liquor and stir, turn off the heat, cool the sauce.

In a small saucepan, heat the remaining 1 glass of milk, butter, salt, turn off the heat. Pour in all the flour and stir thoroughly until a homogeneous mass is obtained, then add 5 eggs one by one, beat the resulting dough with a mixer.

Using a large spoon, place pieces of dough about the size of a walnut on a baking sheet and place in a very well preheated oven.
Step 8
Bake the profiteroles first over high heat, and then after 18 minutes reduce the heat and continue baking for another 12 minutes.
Step 9
Get the ready-made profiteroles, cool a little, make a small cut in each of them and fill the insides of the cake with ready-made ice cream, transfer to a dish and pour chocolate sauce on top.
