Pelusta is a delicious pickled cabbage with a characteristic raspberry color, which is obtained due to the presence of beets in the composition of the pelust. Cabbage prepared in this way can be included in salads or used as an appetizer for main dishes.
It is necessary
- - 1 swing of cabbage;
- - 1 carrot;
- - 1 beet;
- - 3 cloves of garlic;
- - 200 milliliters of sunflower oil;
- - 200 milliliters of table vinegar 3%;
- - 1 glass of granulated sugar;
- - 2 teaspoons of salt;
- - 1 liter of water.
Instructions
Step 1
In order to cook the dough, take a white cabbage, wash it well under running water and cut into squares, about 3 by 3 centimeters in size. The stump will not be useful to you in the preparation of the dough.
Step 2
Wash the carrots and beets, peel them, then grate the vegetables on a coarse grater. Also, peel three garlic cloves and cut them into thin slices. Place all vegetables in an aluminum pan and stir well.
Step 3
Prepare the marinade. To do this, take a medium-sized saucepan and combine sunflower oil, vinegar, water, granulated sugar and salt in it. Mix all ingredients thoroughly.
Step 4
Put the saucepan with the marinade over medium heat and bring the mixture to a boil, then immediately remove from heat. Pour the resulting marinade into a saucepan with vegetables, press down on top with a press. You can use a jar filled with water as a press. The press is necessary so that the cabbage is evenly colored in beetroot color.
Step 5
Put the pellet in a dark, cool place for 2-3 days, after the time has elapsed, take out the cabbage pickled with beets, carrots and garlic. Divide the dough into the jars and refrigerate.

The peel is ready! Serve pickled cabbage as an appetizer or salad with meat or fish dishes, baked or boiled potatoes.
