Various types of cheese pies are found in many national cuisines, for example, in Georgian - they are better known as khachapuri. There are many recipes for such pies, they are usually simple to prepare, but they turn out to be very tasty, especially if they are served hot.

- For pies with feta cheese:
- 3 cups flour
- 1 glass of milk
- 2 glasses of water
- 2 eggs
- 100 gr butter
- 15 g dry yeast
- 1 tablespoon sugar
- 350 gr feta cheese or suluguni
- Vegetable oil for frying
- Salt and pepper to taste
- For puff pastries with cheese:
- 1 kg of finished puff pastry
- 300 gr of any hard cheese

Recipe for pies with feta cheese
Prepare the dough first. Dissolve the yeast in a little warm water. Add a tablespoon of sugar and a tablespoon of flour, stir and remove to a warm place for 15 minutes.

Sift the remaining flour. Make a hole at the top and pour milk into it. Then add the egg yolk to the same place, start beating it. Pour in the mixture with yeast, melted butter (50 g), knead the dough thoroughly. Then put it in a warm place for 2-3 hours.

Now prepare the filling. Grate the cheese on a fine grater (if you are using soft cheese, just mash it with a fork), add the egg, the remaining butter, salt. Chopped herbs can be added if desired. Mix everything thoroughly.

Roll out the dough into a thin layer. Cut out circles from the dough, put the filling in the center of each, pinch the edges carefully. Bake the pies on a baking sheet lined with parchment paper or oiled at 180-200 degrees until they are lightly browned.

Cheese Puff Pastry Recipe:
You can make your own puff pastry for pies, but the purchased one keeps the cooking time to a minimum.
So, roll out the puff pastry in a thin layer. Cut it into small rectangles. Prepare the filling. To do this, grate the cheese. By the way, you can use any cheese except processed cheese. You can add herbs or finely chopped ham to the cheese.
Step 6
Place the filling on one half of the rectangles. Do not overdo it - if there is too much filling, it will leak out of the pies, and they will burn. Put the fillings no more than a tablespoon. Pinch each pie carefully.
Step 7
Line a baking sheet with parchment paper and place the patties. Place in the oven at 180 degrees. Bake for about 15 minutes, increasing the temperature from time to time. Once the patties are browned on both sides, you can take them out.
