An original appetizer in the form of cabbage croquettes will be an excellent decoration for your festive table. Croquettes are very delicate in taste. The main highlight is the crispy crust.
It is necessary
- - deep fryer;
- - cabbage 1-1, 2 kg;
- - carrots 1 pc.;
- - milk 100 ml;
- - chicken egg 3 pcs.;
- - semolina 3-4 tbsp. spoons;
- - flour 4 tbsp. spoons;
- - bread crumbs;
- - butter 40 g;
- - salt;
- - spices to taste;
- - vegetable oil for frying.
- For the sauce:
- - milk 100 ml;
- - butter 20 g;
- - flour 2 tbsp. spoons;
- - sugar 1 pinch;
- - yolk 1 pc.;
- - salt.
- For decoration:
- - green onions.
Instructions
Step 1
Cooking the sauce. Saute the flour in butter, then dilute it with hot milk. Add sugar and cook over low heat for 15 minutes, stirring constantly. When the sauce has cooled, add the raw yolk and salt, then stir.
Step 2
Peel the head of cabbage from the top leaves and chop finely. Peel the carrots and cut into small cubes. Boil milk, add butter to it and simmer cabbage and carrots in it.
Step 3
When the cabbage is soft, fold it and the carrots in a colander. Then transfer the vegetables to a saucepan, pour in some of the milk sauce and bring to a boil. Pour in the semolina in a trickle. Chill the mixture and add 2 raw eggs to it. Mix thoroughly.
Step 4
Divide the resulting mass into small pieces and form croquettes, i.e. balls. Dip the croquettes first in flour, then dip in an egg and roll in breadcrumbs. Deep-fry croquettes.
