To prepare berry puffs, you need a pack of puff pastry, granulated sugar and berries. It can be raspberries, currants, strawberries, cherries or other berries of your choice (and you can use both fresh and frozen berries). Empty the dough from the freezer, open the package and separate the plates, and leave to defrost. In the meantime, prepare the filling, gently wash the berries in a colander and let the water drain. When the dough is soft, dust it with flour and roll it out a little (one way). You can stretch the dough slightly with your fingers to prevent the pastry from rising too much. Cut it into squares of equal size with a sharp knife. Place half of them in a large skillet or baking sheet, lined with parchment paper and sprinkled with a little flour. Leave a distance between the layers, do not fold tightly, as the dough will increase in size during cooking. In the remaining half of the square blanks, cut out the so-called windows in the form of squares of a slightly smaller area. Connect in pairs the blanks on the baking sheet and with the cut-out windows. Use the prongs of a fork to press down on the edges of the dough so that the parts join together and the berry juice does not flow out. Put the cooked berries in a small slide in the windows, during the cooking process the dough will rise, and the berries, on the contrary, will settle. This will achieve approximately the same level of dough and berry filling. Sprinkle two teaspoons of granulated sugar over the berry puffs per baking. Use a fork to pierce the dough of each puff in several places. Then brush each pie with a beaten egg for a delicious and shiny crust. Place a baking sheet with berry blanks in an oven preheated to 200 ° C. Bake for twenty minutes. Serve hot pastries with fruit tea or milk.
