The most important ingredient in making charlotte is love! Yes Yes. Here's an unusual ingredient. But without it, you can't get the most delicious charlotte in the world. When I was little when I came to visit my grandmother, she always prepared her signature charlotte for my arrival. On top of such a charlotte there was always the most delicious crust in the world! I just adored her. Many years have passed, and now, finally, I learned how to make the same insanely delicious charlotte. With a crust:)

It is necessary

  • 1. Large eggs (SB or selected) - 3 pieces
  • 2. White sugar - 1 glass
  • 3. Sugar with vanilla (NOT vanillin!) - 1 sachet (or 15 grams)
  • 4. Wheat flour - 1 glass
  • 5. Apples (I have them green, Granny Smith) - 4 medium pieces
  • 6. Lemon juice - 1 tablespoon
  • 7. Vegetable oil (I have olive oil) - 1 tablespoon
  • 8. Semolina - 2 tablespoons
  • 9. Spices (cinnamon, nutmeg, lemon pepper) - to taste

Instructions

Step 1

Prepare a form with a diameter of 18 centimeters - you need to grease the form with vegetable oil and sprinkle with semolina.

Preheat the oven to 180 degrees, top-bottom, convection.

Prepare the apples - core them, cut into equal sized pieces (cubes), drizzle with lemon juice and stir. This must be done so that the apples do not darken while we prepare the dough for the charlotte.

Step 2

Eggs (they must be at room temperature), beat with sugar and vanilla sugar until a white ribbon.

To do this, combine the eggs and both types of sugar in a bowl, begin to beat at the lowest speed, gradually increasing to medium. And beat at medium speed until the mixture has increased in volume by 3-4 times and turns white. The sugar should dissolve in the eggs while beating.

Step 3

Sift flour 2-3 times. Stir into the egg mixture for 3 sets, stirring well with a spatula each time. Mix well, but very carefully so as not to lose the splendor of the egg mixture.

If you are using spices, then add them to the dough along with the flour, also sifting beforehand.

Step 4

After the flour has been introduced, apples can be added. Stir and pour the mixture into the prepared dish. Smooth with a spatula.

We send to the oven for 30-35 minutes. Then we reduce the temperature in the oven to 140 degrees and bake for another 30 minutes. Our landmark is a toothpick. It should come out dry, no dough.

Step 5

Leave the charlotte to cool in the mold, then remove from the mold, wrap the edges of the charlotte with foil and refrigerate overnight (or 12 hours).

In the morning we serve delicious charlotte with a cup of tea or coffee and enjoy!
