It is necessary

  • For three servings:
  • - 200 g of boiled wild rice;
  • - 200 g feta cheese;
  • - 100 g of cherries;
  • - 80 g of arugula;
  • - 1 shallots;
  • - 2 tbsp. tablespoons of olive oil, balsamic vinegar;
  • - black pepper, salt.

Instructions

Step 1

Rinse the shallots, cut into thin rings. Pour a small amount of olive oil into a frying pan, add the onion rings, fry them until golden brown over medium heat, stirring so that they do not burn.

Step 2

Rinse the cherries. It is better to take large dark berries for the salad, then the salad will turn out to be very juicy and tasty. Cut each in half and remove the seeds. Cut the feta cheese into small, even cubes.

Step 3

Combine rice, arugula, cheese, cherries and onions in a deep bowl. Boil the rice in advance until cooked, but do not boil it - it should not turn out into porridge.

Step 4

Mix balsamic vinegar with olive oil, salt and pepper separately. Season the prepared salad with cherries and wild rice with the resulting sauce, cool slightly in the refrigerator for at least five minutes and soak in the sauce before serving.
