The first hamburger was sold in the United States over two centuries ago. Since then, it has conquered all continents, but in Europe it is still associated with the so-called "fast" and unhealthy food. Meanwhile, in America itself, supermarkets sell high-quality lean beef chops for homemade hamburgers. A home-made hamburger is by no means the most unhealthy food.

Step 1
Lean hamburger patty
Take a fresh beef fillet, rinse, cut into pieces and grind in a meat grinder. Add breadcrumbs, an egg to the minced meat, mix, add spices, salt and pepper, mix thoroughly again.
Step 2
Moisten your hands with cold water, divide the minced meat into equal balls, from each ball, make a round cake two to two and a half centimeters thick. Heat some vegetable oil in a heavy-bottomed skillet and fry the patties on both sides for eight to ten minutes.
Step 3
Hamburger cutlet with lard
Wash the meat, peel the onions, cut them into pieces, add the chopped unsalted bacon, mince, salt and pepper the minced meat, add spices.
Step 4
Form the minced meat into flat cakes with a thickness of one and a half to two centimeters, the size of a bun, into which the cutlet will be inserted. Fry over high heat in a skillet, with a little vegetable oil (you can do without oil, just put the cakes on a hot skillet with a thick bottom, use a thick-walled skillet with a wire mesh bottom) for two to three minutes on each side.

Oven hamburger patties
Take fresh beef fillet and fatty veal, for example, intercostal meat, where meat and fat are about half. Cut, pass through a meat grinder with a coarse grate, add salt and pepper to the minced meat, mix. Divide the minced meat into five round cutlets one and a half to two centimeters thick, put on parchment paper and refrigerate for two hours.
Step 6
Preheat the oven to 250 ° C, put the cutlets on the wire rack, put a baking sheet under the wire rack, covering it with paper (for dripping fat). Place the wire rack and baking sheet in the oven for fifteen to twenty minutes.
