Filet mignon is a tenderloin roast beef that is generally considered juicy enough to be served without sauce. This is a versatile meat that goes with almost any side dish. You need to order a portion of beef suitable for fillet mignon in a butcher shop at the rate of 225 g of meat per serving.
In order to cook filet mignon, you will need:
- beef tenderloin;
- baking tray;
- string for meat;
- olive oil;
- salt;
- pepper;
- meat thermometer.
1. Preheat oven at 250 ° C.
2. Wrap the piece of beef with twine until it is cylindrical. Wrap with twine through equal lengths of 3, 8 cm. This will cook the meat evenly and keep its shape.
3. Brush the prepared piece of meat with about 2 tablespoons of olive oil, salt and pepper.
4. Place the meat on a roasting tray and place in the oven. Bake for 12-15 minutes if the meat weighs 900-1300 g, and 15-20 minutes if the meat weighs 1800-2250 g.
5. Reduce heat to 175 ° C and bake for another 20-25 minutes.
6. Check that the roast beef is done with a meat thermometer stuck in the center of the piece. If you want the meat to come out with blood, the thermometer should read 52 ° C. For a medium degree of roast, the temperature must be 57 ° C.
7. Remove the filet mignon from the oven when it's done. Leave to stand for 15 minutes, then serve.
