Even simple stale bread can be used to make a variety of dishes, from soups to drinks and desserts.
It is customary and simple to put stale bread on cutlets or bread crumbs. Or just dry the crackers. And you can also cook:
Florentine soup with bread
Take any vegetables you like. For example,
- eggplant and zucchini - 1 piece of the same size
- potatoes - 2 pieces of medium size
- onion, sweet yellow and red peppers, carrots - 1 pc.
Add to this list:
- bread - 200 g
- vegetable oil - 2 tablespoons
- salt, spices, dry Italian herbs - to taste
- water - 1 l.
Peel and cut all vegetables into cubes.
Heat oil in a thick-walled saucepan, add all chopped vegetables at intervals of 2 to 3 minutes, starting with carrots and onions and then in any order.
Cover the saucepan and simmer the vegetables over medium heat until tender. Remove the lid periodically and stir the contents of the saucepan.
Now pour in the water and bring to a boil. Season with salt and season as you like.
Peel the stale bread and cut into cubes.
Put prepared bread in a saucepan with soup, cover and simmer on minimum heat for no more than 5 minutes.
Stale bread croquettes
- Take 200 grams of stale bread, pour 300 ml of water, mash and add 0.75 cups of wheat flour, a teaspoon of red hot pepper and salt to taste.
- Mix thoroughly until a homogeneous thick mass is formed.
- Pour about half a glass of vegetable oil into the cauldron, heat and fry the croquettes, putting the dough in hot oil with a teaspoon.
- Place the cooked toasted croquettes on a cloth to absorb the excess oil and transfer to a serving dish.
Such stale bread croquettes are good as an addition to the first courses.
Stale bread croquettes with grated cheese
They are prepared in the same way as croquettes from stale bread, but add 1 - 2 tablespoons of grated cheese to the dough. Everything is thoroughly kneaded and croquettes made of stale bread are fried in a large amount of vegetable oil.
Stale bread croquettes with potatoes
Here everything is exactly the same as in the previous recipes, but instead of cheese, peeled and finely grated potatoes are added - one piece is enough.
Panzanella
Panzanella, upon closer inspection, turns out to be a familiar summer vegetable salad with slices of bread, seasoned with oil, familiar from childhood. Take 2 medium-sized tomatoes, one large cucumber and cut into random slices, add onion, chopped in half rings to taste, salt, season with vegetable oil and add diced stale bread - 2 - 3 slices are enough.
Old Russian bread soup
This dish is a dessert served chilled.
- To prepare the old Russian bread soup, take 5 slices of stale bread. Break the bread into pieces and pour 400 ml of hot water. After 10 minutes, rub through a sieve, add half a glass of raisins, ground cinnamon and sugar to taste.
- A saucepan with mashed bread mass is placed on a quiet fire and cooked with continuous stirring until it boils.
- Add 2 - 3 tbsp. sour berry juice (cranberry juice, lingonberry juice is best), mix and immediately remove from heat.
- Hot soup is poured into bowls and cooled.
- Old Russian bread soup is served with tea as a dessert.
